"Hmmm.. I've read that sumac juice gets more tannic when heated, so I would think that it would have the opposite effect on elder juice. I always use the lemon juice also, to reduce/eliminate the tannic aftertaste, so would be concerned about…"

My grandparents made wine and jelly from elderberries my grandfather picked in the Arkansas River bottoms.  I always remember my grandmother adding lemon juice to the elderberry juice along with sugar; she said it needed some acid for taste. I believe she was right; anyway I have added lemon to my elderberry juice in deference to Gram.However last season (2011) I tried using some Sumac, in lieu of lemon, i.e. "Indian Lemonade."  It worked quite well, and I think possibly better than lemon, plus…See More
