Ah, for a good elderberry wine. Note the preparation times on these before you start... wine doesn't happen overnight! Add your recipes here as well, or let us know how your progress is going!

Jim has been hunting for a recipe for wines that doesn't use Campden tablets, as there's proof that they contribute to cancer. We've been hunting for months trying to find recipes, and finally, here we are, almost all the recipes listed here are without campden.
Thanks for the note about the campden tablets! I hadn't heard that, but it's good info. :)

Thanks so much for the warning! That's a bummer... I really liked the recipes that had been on that site back when I first added it a couple years ago. I've removed that link for now.

I may be late with this reply but Campden tablets when used to kill off wild yeast and bacteria and open to the air will dissipate in about 24 hours while the tablets when used to stop the fermentation process and corked up will not dissipate

I would like to know where you got this info. I got interested and cannot find any info that states camden tablets or powder can cause cancer. Please give me the article where you got it. I have been making wine awhile now and never heard of this. It would be good info if it was credible.

Sandra:  I just put down some elderberry wine and I just use the juice of the berries, sugar and yeast.  Nothing artificial, no campden tablets or peptic enzyme etc.  The yeast will stop working on its own when the sugar is spent.  It takes a little longer but I am pleased with the results

You dont need a special recipe not to use metabisulphide, just dont use it and make the recipe the same way. There is nothing artificial or chemically about pectic enzyme, it just cuts up pectin, just as it does in nature.

 

We have a lot of elderberry recipies on our site, you may even be interested in steaming your juices, that way they are somewhat cleaner than just fermenting fruit without metabisuphites.
